If you follow Julia to the letter, your dishwasher would be filled
overflowing, day and night. Some of us can make her recipes with one
tenth of the amount of pots and pans she uses.
Americans, and that is who Reinhart is writing for, understand plastic
wrap. Only within the past few years has parchment arrived in this
country. I have been using it for many years because my wife is
European, and they have been using it for many, many years. In fact, you
will find my citing of his recipe for bagels, with the caveat that you
should be using parchment. But the fact that I continue to use his
recipe is proof that his recipe is good.
I think you should lighten up a bit. After all, the value of his work
comes from his technique, not his choice of wrap.
